Consuelo (Coco) Grant comes to the University of Portland from Arizona. Coco became interested in nursing after a two-year AmeriCorps volunteer experience with the Cabrini Sisters in New York City. She returned home to Arizona to earn an associate degree in nursing from Scottsdale Community College in 2007, her R.N. to B.S.N. from Grand Canyon University in 2017, and a Ph.D. in nursing from the University of Arizona (UofA) in 2022. Coco’s nursing career focused on home health as a visiting nurse and case manager for both adult and pediatric patients. She also holds a certification in wound care from the National Alliance of Wound Care and Ostomy. She currently is completing a fellowship with the Veterans Administration. Her research interests are focused on nursing theory development, taking what she knows about wound care and wound healing from her certification and applying it analogously to the study of woundedness in vulnerable populations such as nurses and veterans. Coco has been active with the Western Institute of Nursing, serving as the student representative to the board and currently on the DEI committee. She also serves on the alumni council for UofA College of Nursing. She and her dogs will be brand new to Oregon
